As a long-standing member of the hummus haters club, I was very (pleasantly) surprised to try some hummus this weekend that I actually liked! My mother-in-law brought some homemade hummus to my nephew's 2nd birthday party, and I snagged the recipe. I've been cutting a lot of sugar out of my diet, and perhaps hummus tastes different to me now, but I made some this morning and brought it for lunch. I hope you enjoy it as much as I do. I'll try to take a picture next time and post that too!
1-15 ounce can of chickpeas, drained and rinsed
1/4 cup fresh lemon juice (one lemon)
1/4 cup tahini
Half garlic clove (I used minced squeeze garlic)
2 Tbsp. olive oil
1/2-1 tsp kosher salt
1/2 tsp ground cumin
2-3 Tbsp water
Paprika (on top for serving)
Combine tahini and lemon juice first..pulse one minute. Add olive oil, garlic, cumin, mad salt for 30 seconds. Add one-half chickpeas and pulse until smooth, then the next half. Add water to desired consistency. Spoon into serving dish. Drizzle with olive oil and sprinkle with paprika.
